Here is a spin on an everyday favorite recipe. Instead of baking pizza in the oven, try grilling it. It makes for a delicious meal. For the pizza dough, I usually use Papa Murphy’s. If you ask for cheese on it, they usually let you keep the tray. If not, they will just give you the dough. Feel free, however, to use your own dough in this recipe.
2 chicken breasts
4 – 6 cups chicken broth (can be replaced with water and chicken bouillon)
BBQ sauce of your liking
Mozzarella cheese and/or other varieties
Sliced onion (optional)
In 4 -6 cups of chicken broth, boil the 2 chicken breasts until it is easy to pull apart and shred. Preheat your grill, turning it to medium or 350 degrees. Spray cooking oil on the grill rack to keep the dough from sticking. Take your pizza dough and spread a light amount of olive oil on one side. Put the greased side down on the grill, adding olive oil to the top side of the dough. Cook for about 3 -5 minutes and then flip the dough over. At this point, reduce heat to med-low or about 250 degrees. Pour the BBQ sauce on the dough, adding the shredded chicken, cheese and onions on top of the sauce. Close the grill lid and wait until the cheese melts.
