Spicy Pacific Rim Salad

Here is a delicious salad that can stand alone as its own meal. The salad is easy to make and offers a wide range of flavors. It’s one of our favorites and we hope it’s yours too. This recipe will make approximately 4 servings.

1/2 pound boneless beef sirloin steak, cut into 2-inch strips

2 tbsp. stir fry seasoning (see ingredients below) or Asian marinade

2 tsp. vegetable oil

12 oz. fresh green beans

1 tsp. salt

1/2 tsp. crushed red chiles

1 cup seedless grapes (diced mango can be substituted)

1 tbsp. fresh lime juice

1/2 tsp. sesame oil

4 cups chopped romaine lettuce

1 tbsp. toasted sesame seeds (optional)

Stir Fry Seasoning:

1 tbsp. reduced-sodium soy sauce

1 minced garlic glove

1 tsp. finely grated lemon peel

In a small bowl, mix the beef and seasoning or marinade to coat the meat thoroughly. In a nonstick skillet, heat the oil. Stir-fry the fresh green beans until they are crisp and tender. Add 1/2 tsp. salt. Remove beans; set aside.

In the same pan, stir-fry the beef until slightly brown or approximately 1 minute. Return the beans to the pan. Stir in the chiles and fruit. Stir-fry until the fruit is barely heated. Stir in the  lime juice, sesame oil and the remaining salt. Remove from heat and let cool or refrigerate until ready to serve.

To serve, mix the spoon over the romaine lettuce on serving plates. Sprinkle sesame seeds on top. Enjoy!
